Is Spotted Rooster Part of Your Diet?

May 30, 2012

One of the great experiences of travel is to taste a lot of different national dishes.  A favorite among our short-term missionaries is also a national dish of Nicaragua.  Variants of this dish are found all over Central America, but Nicaragua and Costa Rica both claim to have originated the dish.  Almost every household has this dish everyday and many for every meal.  It can be the main dish or a side dish.

What is it?  Gallo Pinto of course.  This concoction of black (or red) beans and rice with spices, onions and other tasty stuff is ubiquitous in Nicaragua.  The translation is "spotted rooster" or "painted rooster" because of the way the juice of the beans colors the kernels of rice.  Every family has their own favorite version of the recipe (somewhat like our family recipes for chili).  That just makes the experience even better because everywhere it is served there can be a slightly different flavor.

Check our our blog for the recipe and while you're there put in your email address to receive our blog updates (in between newsletters and video updates).  Find our blog at (http://jodykennedy.blogspot.com/).

Save the Date - September 15, 2012

God is our anchorIf you've read our newsletter to this point, you are probably one who definitelyy wants to "save the date".

Saturday, September 15 will be a great date in the life of our ministry.  We will gather together with friends, family, ministry partners and more to celebrate what God has done in our lives and ministry in our 12 years of full time service.

More details and RSVP info will be coming soon.

New for 2012
We are challenging ourselves, and you, to reach more people with the gospel in 2012 than in any previous year.

We had our initial meeting with the University of Central America (UCA) in Managua about bringing our Practically Speaking English Course to their campus.  The result was very positive, yet we need one more approval which we think is just a formality.

If approved, we are going to try and schedule an event there for mid-August.  Pray for us to receive the final approval and a great date for the first event on this campus.
